About this wine
The blend includes 30% Chardonnay 30%, and 70% Pinot Noir, harvested manually in the first half of September. Following the Classic Method of sparkling wine, the product matures for at least 36 months on selected yeasts. The wine immediately shows an elegant antique pink color and a persistent perlage. On the nose, the scent is delicate with hints of yeast, given by the more than three years of aging in the bottle, and sensations of small red fruits, typical of Pinot Noir. In the mouth, there is a tasty softness, rich flavors and intriguing vinosity. The aromas of raspberry, wild strawberry, and violet are accompanied in the finish by hints of brioche. Excellent as an aperitif or for an elegant meal based on fish, or shellfish.
